Hailing from the Big Apple, Thomas made his Broadway debut in the production of Four Baboons Adoring the Sun at the age of 12. He continued to work in theater on productions such as Talking Pictures and The Diary of Anne Frank, in which he performed opposite Natalie Portman.

In 1994, at the age of 13, he landed a guest role in Are You Afraid of the Dark?, followed by two episodes of Law & Order and two appearances on The X-Files.

Moving swiftly into feature work, Thomas snagged a small role in the film Illtown (1996). Three years later his supporting role days were over when he got to play the co-starring role of Arnie in The Rage: Carrie 2 (1999). He swiftly followed this up with three more films, including a starring role in American Pie (1999) playing Paul Finch. The same year he also did some commercial work for Snickers.

Continuing to ride the wave of success, the start of the new millennium brought him more feature films including the abysmal and best-forgotten Freddy Got Fingered as well as American Pie 2. He landed a regular role on the WB-TV series Off Centre, which lasted a season. From 2005 to 2011 he provided the voice for several characters, including Barry, in the animated Fox series American Dad!, and played David 'Kappo' Kaplan from 2010 to 2011 in the HBO half-hour comedy/drama How to Make It in America.

Eddie continues to work in films, including the third American Pie movie, American Wedding (2003) and several years later, a fourth, entitled American Reunion (2012).

Eddie has also appeared all three Harold & Kumar films: Harold & Kumar Go to White Castle (2004), Harold & Kumar Escape from Guantanamo Bay (2008) and A Very Harold & Kumar 3D Christmas (2011).
